Hi, welcome to my blog, Pesky Runner. My name is Eimear ("Eeemer", it's Irish).
I am a 'pescatarian' and runner. I started blogging at the beginning of 2010 when I was using veganism and exercise as a means to help my IBS. Since then I have left veganism behind to eat a paleo type diet. I try to eat as much organic food as possible and avoid processed stuff. While I love running, these days I vary it up, not because I don't like it as much, rather because I love it so much I mix it up to stay injury free so I can keep running away. I mix running with aquajogging and strength training/weights.
The blog is about my workouts and the healthy, energizing and tasty eats that fuel them. I *love* food so the recipes here are about squeezing as much deliciousness in while maintaining a healthy diet- and it is possible. I also like to get my food from kitchen to plate pretty quick as I'm a busy girl (not to mention impatient, especially when it comes to filling my belly-bring it on!).
My hobbies are cooking, baking, preserving, gardening, hiking, birdwatching and reading (philosophy, biology, cookbooks, nutrition books, ethics, history).
I studied Philosophy at university and I work as a PA in the Blood Transfusion Service in Northern Ireland.
